Grilled Mediterranean Chicken Salad

What You Need

2 slices Italian bread
1/4 cup  KRAFT Roasted Red Pepper Italian with Parmesan Dressing, divided
2 small boneless skinless chicken breast halves (1/2 lb.)
1/2 cup  cherry tomatoes, halved
1/2 cup KRAFT 2% Milk Shredded Mozzarella Cheese
2 Tbsp.  chopped fresh basil
4 cups lightly packed baby spinach leaves
1/4 cup  thinly sliced red onions

Make It

HEAT grill to medium-high heat.
BRUSH bread slices with 1 Tbsp. dressing. Brush chicken with 1 Tbsp. of the remaining dressing.
GRILL chicken 5 min. on each side or until done (165°F). Meanwhile, grill bread slices 1 min. or until lightly toasted on both sides, turning over after 30 sec.
COMBINE tomatoes, cheese and basil. Toss spinach with onions and remaining dressing; spoon onto serving plate. Top with chicken and tomato mixture. Serve with bread.

Substitute
This dish also tastes great when prepared with KRAFT Light Zesty Italian Dressing.
Food Facts
Chop fresh basil just before using to keep the leaves from turning black. This will occur if the basil is prepared too far in advance.
